Rebel Recipe: Will Squat for Squash Goulash

This recipe is extremely macro and carb friendly because we use zucchini instead of traditional pasta. Awwww Yeaaaa! Talk about volume food! You can totally switch up and customize your ingredients and can basically feed an army with a batch of this comfort food deliciousness.

Here’s what you’ll need:

2 lbs Ground butterball turkey
3 lbs Yellow and green zucchini squash
2 T Minced/chopped Garlic
2.5 T Italian Seasoning
2 tsp. Kosher salt
2-4 Medium white onions
1 Large jar of garlic lovers pasta sauce
**Optional** Your favorite hot sauce of choice!

Prep squash and onions with rough chop in about 1″pieces. Set aside.

In large skillet, on medium-high heat, add turkey, minced garlic, Italian seasoning, and salt and brown meat while mixing in seasonings.

Once meat is browned thoroughly, add pasta sauce, squash and onion and cover. Turn to low and simmer until squash and onions are cooked al dente. ( Roughly 5-7 minutes)

Wah-la! Now say “Get in mah mouth!” This is where you would add your favorite hot sauce to the recipe spice things up a bit. *wink*

Be careful not to over cook the onion and squash. If you can cook veggies “al dente” style it will make future meals tastier because the veggies will not become mush when re-heated. Store in air tight containers and portion out according to your meals you’re needing for the week.
